Polly Dolly... Bike Riding

After the day/week that I have with a (challenging) uni assignment, it felt good to spend up big time with my imaginary credit card... I pictured myself riding along the lake on a sunny Sunday morning with a picnic basket packed full to the brim with wine, cheese, dips, crackers and fresh fruit.

RhiCreate takes a business step...

RhiCreate has taken a step outside RhiDiscover and is making itself a business tycoon... Well trying to anyway... RhiCreate is now up and running on madeit.com.au... This is the first baby step for the business, DIY Cutomisable Party Printables... These party printables are fully personalised and customised to your event making it that extra special... At the moment they are DIY which means print at home... Once the designs are complete they are emailed to you as a PDF so you can print them at home and as many as you want... I will soon be venturing into printing as well...

If you have an occasion with a theme coming up and want some in particular, let me know and I will see what I can do...

RhiCreate will also be dabbling in 'Dessert Tables'...  The fun and fresh new alternative to any event or occasion... I post my dessert tables on here regularly so take a look and let me know if you would like one at your next event (Newcastle/Central Coast area only)

A new website and blog are to come for RhiCreate so keep posted... In the meantime keep up to date with all that is happening via Facebook and Twitter, and of course RhiDiscover (blog)...  Be sure to spread the word to friends and family

Teddy Bears Picnic

It was Evan's first birthday and the theme was so cute... Teddy Bear's Picnic!
The table had little teddy cars, teddy cake pops, teddy in beds and a giant teddy made out of bread...
The cake was red velvet as I had been busting to try it out... Was quite yummy!
The party was in a garage so I apologise for the lighting of the pics...

If you like the printables of this Teddy Bears Picnic party, head to RhiCreate's madeit.com.au store to purchase a customised DIY set.

Mini Baked Oreo Cheesecakes...

It was my official last day of holidays so I decided to cook up a storm and have a few friends over for dinner.  I planned a three course meal and of course the dessert had to be one of the highlights.  It all went off without a glitch and tasted unreal.

My Menu
Entree:  Creamy Pumpkin Soup with Crusty Bread
Main: Swedish Meatballs with Caramelised Onion Mash and Steamed Greens
Dessert: Mini Baked Oreo Cheesecakes topped with Whipped Cream

Mini Baked Oreo Cheesecakes

Ingredients
1 packet of Oreos (original size)
1 packet of Oreos (mini size)
250g Philly Cream Cheese, softened
1/3 C Caster Sugar
1 Egg
1 T Lemon Juice
100ml Thickened Cream
Extra Cream for Whipping

Method
  1. Preheat oven to 180 degrees
  2. Prepare 10 muffin tin holes with patty papers
  3. Twist the original size Oreos in half and place one in the bottom of each patty paper
  4. Beat cream cheese and caster sugar with an electric mixer until smooth and creamy.  Be sure to scrape down the sides occasionally
  5. Add egg and beat until well combined
  6. Add lemon juice and cream and beat until combined
  7. Cut remaining original size Oreos in quarters and fold through the cream mixture
  8. Divide the mixture evenly amongest the patty papers
  9. Bake in the oven for 20mins
  10. Once removed, leave to cool in tin for 30mins.  Transfer to air tight container and store in refrigerator until set.
  11. When serving remove patty paper and top with whipped cream and mini Oreo

Tips:  I found the silicon patty papers to be exactly the right size for the Oreo biscuit.  These cheesecakes can be frozen.

Fairy Dessert Table... Ruby's 1st Birthday

What an occasion to celebrate... Ruby's 1st Birthday!  And why not celebrate it with a gorgeous fairy theme for she is a special lil fairy herself.

I loved creating this dessert table for such a special little girl that is close to my heart.  The purple, pink and teal colours really brought together a little girl feel about the party.  Yummy little biscuit teapots and choc covered Oreo's were a favourite, as well as the jars of sweets.   There was plenty of cake to be had with the gorgeous number 1 cake that mum (Kate) had decorated and the colourful cupcakes on the side.  The one thing that is missing from this table were the beautiful balloon centrepieces which were not liked by the wind and grass, so hence they didn't last long outside.  Oh well!

Hope you enjoyed your party Ruby!!!

P.S Sorry for the delay in getting up on here

Day 2: What I wore today...

It is hard to take a full length photo when you only have a tiny mirror... White blazer, scarf and jeans was the fashion of the day.  Nice casual outfit for work.

Day 3 is clouds... I'm heading out into the country tomorrow so hopefully there will be nice white fluffy clouds instead of the horrible grey and black ones we've been seeing lately.

Along with FatMumSlim I am going to take part in this '30 Day Photography Challenge' that has been created by WhitePeachPhotography.

Why don't you join the challenge for a bit of fun?

Ruby's 1st Birthday Inspiration

Next weekend is my girlfriends daughters birthday and she is turning one.  Time has flown by so quickly.  So I'm heading out to the bush and doing a dessert table for a special little girl.  Pink, purple with a splash of teal green and lots of cute fairies.
This is the inspiration board, photos to come next week.

Sarah's Baby Shower...

Just before Easter I went to my darling girlfriend, Sarah's, baby shower.  Although the weather was horrible it still didn't put a dampener on her day.  Her sisters and mother-in-law had everything sorted for lunch so I decided to bring dessert.  She is unsure of what she is having so I did pink and blue cupcakes in a vintage theme.

Cant wait for bubba to join us in the big scary world...

P.S.  Sorry about the bad lighting in the photo... The weather was horrid and there was no natural light in my house.  But you get the picture :-)

RhiCreate Logo...

I am looking at putting RhiCreate online, maybe starting an Etsy shop as well as doing dessert tables.  But before I do this I need to figure out what is going to be the identity of RhiCreate, therefore I need a logo.

I have been working on a few designs and want your feedback.  Constructive criticism welcome.  I also have a few colour palettes that I'm working with too, let me know which one you like (brown/pink or grey/pink).  The logos are numbered for easy referencing, so it would be greatly appreciated if you quickly left a comment saying your opinion.  More the better as I am quite terrible at making decisions on my own.  You might also have another idea for a totally different logo... Let me know.

Thanks for your time, it is greatly appreciated

Easter is coming... What did you EGG-spect!!!

As its that time of year again and the Easter long weekend is fast approaching now, I decided to put up some EGG-cellent cupcake toppers to share.  This way you can brighten up your Easter Feaster with these colourful masterpieces.  I use a 2" punch to cut these out and stick them onto toothpicks or lollypop sticks.

I have been at a work course this week so I haven't had time to bake, otherwise I would have posted photos of Easter cupcakes with these toppers in them.  Hopefully I get time over the long weekend to do some baking.

Hope you all have a wonderful Easter break and I'll see you after the long weekend.

RhiDiscover is now on Twitter...

I have been at a work course this week on Web 2.0 Tools, and one of the sessions was on Twitter.  So I had to succumb to the Twitter world and start an account.  The reason why I didn't want to start up an account was because I didn't want to get addicted, and everyone who is a Twitter user says its addictive.

But here I am now... A Twitter'er.  So please follow me if you have an account too.

#RhiDiscover

Please remember I am only new to this so still working out how to use it properly.

Choc Chip Oreo Cookies...

I am a sucker with a sweet tooth, so I decided to try a new thing.  I'm sure its probably been done before, but I did think this awesome idea in my pretty lil head.

You love Choc Chip Cookies.... You love Oreos... Why not put them together... Why not put the Oreo INSIDE the Choc Chip Cookie!!!!  Genius!!!

I used the Oreo minis, which are yummo, but I don't think gives the same effect as the big ones.  I'll use the big Oreos next time.  That will also make the cookies bigger, which automatically means better.

Choc Chip Oreo Cookies

Ingredients
125 g Soft Butter
1/2 C Castor Sugar
2 drops Vanilla
1 Egg
1 1/2 C SR Flour
1 T Corn Flour
1/2 C Choc Chips
1 packet Oreos (you can eat the left over Oreos)

Method
  1. Preheat oven to 180 degrees and prepare oven slide
  2. Cream butter, sugar and vanilla with electric mixer until creamy and fluffy
  3. Whisk egg and beat into creamed mixture
  4. Add choc chips and stir through creamed mix
  5. Sift flours into seperate bowl
  6. Gradually add flour mixing well with a wooden spoon until all ingredients are combined
  7. Turn cookie dough onto board, knead gently, roll into log
  8. Evenly cut the log into slices.  Each slice is a cookie
  9. Take a slice of cookie dough, halve it, put the Oreo in between the dough and mould around the biscuit
  10. Roll and place on prepared tray
  11. Bake in oven for approx 10-15 mins, until starting to go golden brown
  12. Cool on wire rack
  13. Serve or store in an air tight container

Skeeta goes Pop Art...

The weekend that has just passed I got to doggy sit my little dog Skeeta.  He stills lives at home with my dad so it's good to have him visit.  It was a gorgeous day outside so we had some fun in the sun.  He's a very happy little puppy as you can see by his big smile.

iPad in the Kitchen???

This week I have upgraded from my iPhone 3 to the iPhone 4 and it has sent me a little bit Apple mad.  As I was walking past the Apple Store today on my shopping travels, jam packed inside were hundreds (a little exaggeration) of people, all Apple mad the same as me.  It got me thinking...  What are the different uses for the iPad?  What is the difference between a child and an adult wanting an iPad?  A mother and a professional?

Then I asked myself the question... Why do I want an iPad? I have a desktop PC and a laptop, do I need an iPad?  How would it be beneficial to my life?

Answer... And I thought it was a pretty good one too... I would most definitely use an iPad in the kitchen.  It is the perfect kitchen utensil.  Long gone are the days where you go out and buy an abundance of cook books (although I do have a box full).  If you want a recipe the first place most people go these days is online.  It is light weight and compact enough to have on hand in the kitchen.  It would probably fit nice and snug on a recipe book holder for easy reading.  And most of all you can have your blogs or recipe websites right on hand when you are in the kitchen creating a masterpiece.

Do you think I have justified the use of iPad enough to get one now?   If I'm a good girl, maybe the birthday fairy or Santa will be nice to me this year.

Rainbow Cake...

I have been looking at these magical rainbow cakes for a while now, and I decided that it is definitely going on the '2011 To-Do List'.  Then I got an email from my dear friend and work colleague a few months ago suggesting I should make it for her birthday.  "Yeah yeah", was my reply, but of course I was always going to do what she wanted.  If she wanted a rainbow cake, she was going to get a rainbow cake, no matter how late I had to stay up baking on a school night.

To look at it just looks like a normal white iced cake, but the magic happens when you actually cut a piece out.  Viola... A burst of rainbow!

RhiCreate does School Expo...

Whilst I have been a busy little bee at work, I did manage to scrape in some RhiCreate time.  We had our first ever open school expo and my foodie kids were catering for the event.  I was trying to think of something with a WOW factor, then it came to me... Cupcakes and lolly bags.  I made the printables for the cupcakes with our school emblem and made the lolly bags filled with lolly pineapples (school colours... green and yellow).

These were a great hit with staff, students and our welcomed guests.  So liked in fact, that the newspaper choose to put my catering kidlets and their wonderful platter of cupcakes in the local newspaper.  I was such a proud teacher.  These are the days when teaching is such a rewarding job and I couldn't think of doing anything else.
