What a girl needs... for Christmas

Along with my Cricut Cake Machine I received another awesome gift from my family 'non-secret' Santa.  This may look like an ordinary handbag but its not.  This is a ladies CAMERA bag.  This will house my Canon DSLR when I am on the run.  No ordinary ugly looking camera bag for me, stylish all the way hehehe.  One of the greatest things about it is, it's big enough to hold all your personal items (wallet, phone, snacks, lip gloss) as well as your other lens, memory cards etc.  Jo Totes, what a genius idea.

Santa was very good to me...

I must have been a very good girl this year and Santa must have been listening very carefully to what I wanted.  To my surprise I awoke on Christmas morning to find a BIG box (half wrapped in wrapping paper and the other half in A4 drawing paper, he ran out).  The box was heavy and awkward to move but I easily ripped the wrapping to find... A CRICUT CAKE MACHINE!!!

I was stunned... speechless... extremely grateful.  This machine is unreal.  Click here to see the sort of things this wonderful machine can do.  I've got a wedding and birthday cake coming up next month for some friends and I think this machine is going to get a workout.  I've already started designing the cakes in my head.

Live, Love, Laugh... Canvas Art


I have finally had time to sit down and create some new art work for my home using my goodies from WOW.  The colour scheme for my lounge room/kitchen is red, brown and beige, hence the colours on my canvas.  This is on my wall in my lounge room and also goes perfectly with the red colour theme for Christmas.  I have another under way but I am waiting on the right fabric.  It's hard when you know what you want in your head but you cant find it.

Point & Shoot: Road Trip



This weekend it was a road trip back to the farm.  We always pass this lookout and for once we actually stopped.  The rays of sunshine spilling onto Giro was just magnificent.  Lucky I had my camera with me as I thought... "Perfect picture for my 'Point & Shoot' this weekend".  It really is a beautiful part of the country.

Christmas Canvas...


Christmas is sneaking up on all of us with only 3 weeks til the fat man visits.  I'm a little bit slack with the whole Christmas tree thing (and my house is very small so it doesn't fit), so I thought I would improvise and create my own hanging Chrissy tree.  Next year I promise to have a proper tree with lights as the renovations will be done by then and there will be more room.

Point & Shoot: Family Games Night


What a great way to finish the weekend.  A family night with pizza and board games.  Pictionary was first cab off the rank, with my sister and I winning by a fairly decent margin, then a game of Scattergories, which we didn't do too well in.  
I also downloaded the new iPhone app 'Hipstamatic' and thought I would have a little muck around with it.  I like the old school photo look.

Piece of cake...

It was my girlfriend's birthday and why give the gift of a pretty birthday cake.  I sat through two seasons of 'Cougar Town' whilst making this cake and decorating it.  Happy Birthday Karts!!!

I wish we had the whole Wilton range in Australia.
This cookie icing that I found in Spotlight was great for the delicate work.








P.S.  Not all the cakes I do are based on PINK, it just happens that everyone I do a cake for loves PINK as well.

Point & Shoot: Sunday Inspiration


So this is my first 'Point & Shoot' post.  This photo is a snippet of my Sunday morning.  The sun was shining and the breeze was blowing so my girlfriends and I decided to take a long walk along the foreshore.  It takes a bit of inspiration to get motivated and what better way to get motivated than my PINK joggers and an inspirational singlet quote from Lorna Jane.  What a beautiful Sunday morning.

Cakes from the beginning...

I thought that I would share some of the cakes that I have made prior to this blog.  I just do these cakes as a hobby for friends and family, so each cake is made with love and has a little story behind it.

This was the first cake I made in my cake decorating class.  Myself and Monny slogged out Saturdays mornings to learn how to create these masterpieces.  By far not the best but not to bad for a beginner.


I made this cake for my friends who were celebrating their 25th birthday.  This was my first attempt at the chocolate shards, a little too think.  The cake was yummy though.


I made this wedding cake for my dear friends Karina and Luke for their special day.  Thanks to Monny who is the bestest cake cooker and I decorated.  I used a white chocolate ganache, topped with fresh native flowers.


This was the surprise cake I made for my dad's 50th.  He is a panel beater so I didn't think that a cake with flowers was going to cut it.  Once again, Monny baked the delish cake and I decorated it.  Black icing is NOT fun to work with.  Never again.


My dear friend Ajay was marrying her beau Wes and she asked me to make her cake.  After carefully planning we saw eye to eye on exactly what she wanted.  Ajay chose the love birds for the top (no they are not seals) and we went with the chocolate and silver theme.  The silver smarties were a great finishing touch and edible too.


So that's my cake portfolio so far.  Still amateur but still practicing and evolving with every cake I decorate.  I have another to do this weekend so there will be photos up very soon.  Keep an eye out.

Holiday Snap...



I have recently found this great blog called 'Blog This'.  It's an Australian site that brings bloggers together and gives them inspiration and challenges to blog about.  Helps eliminate bloggers block hahaha.

This photo was taken on the Greek island of Santorini.  I went there in the summer of 2009 to visit my best friend who was travelling Europe at the time.  Santorini is famous for its sunset and I now know why.  It was spectacular.  The sunset colours changed dramatically throughout the late afternoon, providing unbelievable photo op's.  Caroline has the unreal photo of her and I on this same wall with the sun setting behind us, that is my ultimate favourite, but this is the next best thing to post just how unreal it is.  If you get a chance, a Santorini sunset is a must see.

Scanpan for Breast Cancer


I got to work to find that I had a present awaiting me.  When my beautiful work colleague (Chantal) saw this Scanpan Utility knife in PINK for breast cancer she automatically knew I HAD to have one.  She knows me oh so well.  
This knife is just like the ones the kidlets are using on Junior Masterchef.  So why not add a little bit of colour to your kitchen.

Mango Magic


You can tell it is summer time when mangoes hit the fresh produce section of the supermarket.  Its just a pity that mother nature has forgotten to hit the summer switch in NSW.  Raining and cool weather is not my idea of summer.  So to get a little bit of summer in the house I decided to make this easy peasy mango dessert... Mango Magic!!!  So easy yet so effective.


P.S. I think mother nature liked this dessert.  She brought out the sunshine today.  I should do this every weekend.

Mango Magic

Ingredients
Any yummy vanilla ice cream
1 fresh mango

Method
1. Take the ice cream out of the freezer to let soften
2. Line muffin tin holes with cling wrap
3. Cut the cheeks away from the mango and remove the skin
4. Using a small sharp knife carefully cut out your desired shape (I did a heart as it was for my man and it represents my love for summer and mangoes)
5. Place the mango shapes at the bottom of the muffin tin
6. Finely cut the remaining mango and mash
7. Add mango to softened ice cream and mix well
8. Place mango ice cream mix on top of mango shape in the muffin tin.
9. Fold the cling wrap over and freeze for 3-4 hours
10. Remove from freezer and cling wrap.  Serve shape (heart) face up

Note:  These can be made ahead of time and kept in the freezer wrapped in the cling wrap.

Summer is approaching...


It was 8pm and I was driving home when I decided to go the scenic route.  After the first long, hot and muggy day of the season, some young Novocastrians were taking advantage of the refreshing Merewether Baths.
If only I liked going in the water... (sigh)... it would have been very inviting.

P.S. The little specks of light out to see are the coal ships waiting to enter the harbour.  I count them every time I go for a walk along the beach.  Tonight there were 13 with their lights on out at sea.

Dippin' goodness...


So it was Halloween and there was a small get together as a fundraiser for the charity 'Eat so they can'.  I decided to step away from making the traditional (and always successful) dippy damper, and try my hand at the Avocado Log.  As it is a layered dip I was a bit scared as to how it was going to turn out, being the first time I made it and all.  To my surprise it turned out great and was a HUGE hit at the party.

Avocado Log

Ingredients
3 ripe avocados
Squeeze of lemon juice
1 carton of sour cream
1/2 packet taco seasoning
3 shallots
3 tomatoes
1/2 yellow capsicum
1/2 C tasty cheese
1 packet of corn chips

Method
1.  Mash avocado and lemon juice together with a fork
2.  Stir taco seasoning through sour cream.  Put in fridge/freezer to harden a little, makes it easier to spread
3.  Chop shallots and dice tomatoes and capsicum
4.  Line a loaf tin with baking paper and layer from 4th layer to the 1st

1st Layer-     Mashed avocado with a squeeze of lemon juice (to prevent it from discolouring)
2nd Layer-    Sour cream seasoned with taco seasoning
3rd Layer-    Chopped shallots
4th Layer-     Diced tomatoes and yellow capsicum

5.  Refrigerate for 10-15 mins
6.  Turn onto platter and top with the 5th layer


5th Layer-    Top with tasty cheese 

7.  Serve with corn chips

Springtime dusk...


The sun was shining, little white clouds scattered across the sky, birds were singing and the beautiful scene of spring was out in full bloom.  This has been a rare occurrence this season as we have been graced with grey stormy skies and wet days.  I just happened to walk out on my veranda and realised I had pink flowers in full bloom in my own backyard.  For those of you who don't know, I am a PINK person.  Anything pink and I'll love it.  So this was a quick RhiCapture of what a springtime dusk looks like at my house.

Mmmmm Cake!

This is the first 'RhiCreate' post from the kitchen.  This chocolate shard cake is a rich chocolate mud with handmade chocolate flowers.  Everything is edible on this cake.  Well almost everything, the lollypop sticks and ribbon aren't edible... Obviously.
